Healthy Recipes for Diabetics- Cauliflower Rice

  • Medium sized cauliflower- 1
  • Medium sized Onion-1
  • Medium Sized Tomato-1
  • Olive Oil- 3 Tablespoons
  • Cinnamon- ½ inch stick
  • Cardamoms- 3
  • Cloves-2-3
  • Turmeric- ½ spoon
  • Chilli Powder- 1/2 spoon
  • Almonds- 7-10
  • Fresh coriander leaves for garnish.

Cauliflower Rice Biryani Instructions:

1. Cut the Cauliflower florals from stalks. Add the small pieces of florals to a bowl, wash them. Cut them until you get the texture of coarse couscous or grind them.

2. In a pan, heat olive oil and add the spices cloves, cinnamon and green cardamoms. Stir them for a minute and add thinly sliced onions. Cook them until onions turn soft.

3. Add grated cauliflower (cauliflower rice) to the pan. Mix the ingredients and sauté them for 5 minutes

4. To the pan, add turmeric followed by chilli powder. Mix them and add the chopped tomatoes. Let it cook for few minutes and add v.

5. Cook on a slow flame by mixing all the ingredients, stirring till the mixture is dry. Finally add almonds and garnish with fresh coriander leaves. Serve hot.

Feel free to make changes to recipe by adding good foods for diabetics like carrots, peas, mushroom and beans to the biryani.
