What’s more, this Alfredo Chicken Casserole is quick and easy to make, making it perfect for busy weeknights any time of the year.

WHAT YOU NEED

  • cauliflower inflorescences – Cut them into pieces before use. You can get either pre-cut florets or a whole head of cauliflower.
  • Chicken breast – For this recipe, we seasoned and cooked chicken breast, but you can easily use chicken thighs or a mixture of them instead. You can also prepare a batch of shredded chicken in a slow cooker and use that instead!
  • Seasoning – To give the chicken a savory taste, we used a mixture of garlic powder, onion powder, salt and pepper.
  • Mozzarella cheese Mozzarella is one of my favorite cheeses because it is so elastic! We used a pre-ground variety to save time.
  • Keto Alfredo Sauce – You can use store-bought alfredo sauce – just read the label to make sure it’s low in carbs – or try our quick and easy keto alfredo sauce. If you love alfredo, be sure to cook enough so you can try our Alfredo Chicken Low Carb Shrimp Zucchini Lasagna!

HOW TO PREPARE CHICKEN ALFREDO PLUG

Prepare the cauliflower. Place the pre-cut cauliflower pieces and one cup of water in a microwave-safe bowl. Cover the bowl with a damp paper towel and microwave on high for about 3 to 5 minutes, or until the cauliflower is soft enough to pierce easily with a fork. Don’t overcook the cauliflower!

Carefully drain the water from the bowl. Lay the cauliflower on a paper towel and pat the pieces dry using extra paper towels to remove as much excess moisture as possible.

Prepare the chicken. Cut the chicken into 1-inch cubes (you don’t have to be exact, you just want them to be bite-sized) and sprinkle with the onion powder, garlic powder, salt and pepper. Then heat a skillet over medium heat, add olive oil and diced chicken. Cook for about 10 minutes or until the chicken is done. Set the chicken aside.

Prepare the oven and dishes. Preheat oven to 350 degrees Fahrenheit. As it heats up, spray a 13″ x 9″ casserole dish with non-stick cooking spray. Pour in about 1/2 cup alfredo sauce and spread it across the bottom of the pan.

Prepare the sauce. In a small saucepan over medium-low heat, heat the keto alfredo sauce. When hot, add 3 oz mozzarella cheese to the sauce and stir until it melts and the sauce is smooth.

Collect. For this part, we will create layers. Start by adding half of the cauliflower to the bottom. Then add half of the boiled chicken fillet. Let the chicken fill in the space between the cauliflower to create a mixed layer of chicken and cauliflower.

Pour ¾ cup of the keto alfredo sauce over the cauliflower and chicken, then top with half the mozzarella.

Repeat the steps using the remaining cauliflower and chicken to make a layer, then add the remaining keto alfredo sauce and top with the last mozzarella cheese.

Bake and serve. Place the prepared casserole in the oven and bake for 30 minutes or until the casserole is heated through. The cheese should be completely melted and sticky. Let the casserole rest for a few minutes before slicing and serving hot.

BE SURE TO DRY YOUR COLORED FLOWER

Drying the cauliflower is an important step not to be skipped! Cauliflower releases a lot of water during cooking, which is one of the reasons we steam it first to release some of the moisture before we put it in the casserole. Straining and then draining helps remove excess moisture and helps prevent the casserole from turning into a watery mess.

CAN WE USE RICE WITH COLOR COLOR?

Yes, you can use cauliflower rice instead of bite-sized pieces of cauliflower. If you want to do this, there is no need to prepare it ahead of time. Cauliflower rice cooks very quickly because it is very small. Just mix raw rice with chicken cauliflower and then follow the rest of the instructions as written. It will cook well without getting too watery.

HOW TO STORE CHICKEN ALFREDO BAKING RECIPE

Let the saucepan cool completely. Place it in an airtight container and refrigerate for 4 to 5 days. To preheat, preheat oven to 325 degrees Fahrenheit and cook 10 to 15 minutes or until preheated.
